Beet Hummus Dip

Tired of the typical hummus you find at the grocery aisles? Try making your own! In fact, homemade hummus trumps store bought hummus any day. And did I mention it’s super easy and cheap too?! All you need is a can of garbanzo beans, some lemon juice, garlic and tahini or unsweeted nut butter and the whatever else you want to add to make it unique. Here I blend Beets into the dip and you get this beautiful dip that looks almost too pretty to eat.

Beet Hummus

Ingredients:
3/4 cup roasted or pre-cooked beets (Trader Jo’s has the vacuum sealed ones in their refridgerated section that’s good or you can buy roasted beets from salad counters at Whole Food’s)
1 cup garbanzo
2 tbs almond butter
1/2 tsp cumin
1/2 tsp paprika
juice of half a lemon
1 tsp minced garlic
1/2 salt
1/2 tsp dried oregano
1 1tbs olive oil
2 tbs water

Method:
1. Toss everything in your blender and blend until creamy! Place in the fridge to chill or eat right away. Keeps 3-4 days!

Other creative homemade dip ideas 

1. Use Greek yogurt, garbanzo and add fresh mint, cumin and blend, topped pomegranate seeds
2. Use Edamame, cilantro, garlic, tahini, lemon juice and sesame oil topped with sesame seeds
3. Use Avocado, garbanzo, garlic, lemon, cilantro, jalepeno, sour cream, blended and topped with chopped tomatoes and red onions
