Healthy Italian Inspired Mcmuffin

I'm a huge fan of the Sausage Egg Mcmuffin from Mcdonald's. It's the perfect size for me and something about it is just comforting. Maybe all the memories of me getting it as a child as a treat from my parents. That perfect combination of orange juice, breakfast sandwich and hash browns...Now as an adult, I rarely eat it. I'll indulge it as a guilty pleasure here and there but in all honestly it's not the most figure friendly breakfast choice to make. So what do I do on weekends when I do want to indulge a little but not throw off my whole healthy balanced diet? I make my own version of course! I created this Italian Inspired Version as it's light, super flavorful and satisfying without feeling too heavy. I subbed out the sausage for Rosemary Ham, the cheddar cheese for burrata, and added pesto, tomato and basil for extra pop of flavor and freshness. This breakfast sandwich definitely hits the spot for me and looks beautiful too!

Healthy Italian McMuffin

Serves 2

Ingredients:

2 Leadbetter's English Muffins toasted

1/4 lb Rosemary Ham or Honey Ham, thinly sliced

2 slices of thick ripe tomatoes

2 sprigs of basil

2 teaspoon fresh pesto

1 container of burrata

olive oil, salt and pepper to season

Method:

1. Toast your english muffins. I love Leadbetter's English Muffin, they have the perfect soft and slightly chewy consistency. It's made really well and a little more substantial than the usual muffin.

2. Once the muffins are toasted, spread the pesto on on each side of the muffin and start layering with one slice of tomato, ham and finally buratta. Season the burrata with olive oil, salt and pepper.

3. Top off the burrata with Italian Basil.  

4. And finally top it off with the other side of the muffin
