Curry Coconut Turkey Stir Fry w/ Quinoa

Coconut Curry Turkey Stir fry with Quinoa

With the holiday season in full gear, we’ve probably been indulging quite a bit, whether it’s with family, friends or co-workers at all the holiday parties and dinners that take place. It’s the best time of the year for food but not exactly the best time of the year for your figure. And since the holidays happen twice a year, we should definitely take part in all the eating festivities. However as much as I like to indulge, I still try to keep a consistent healthy eating routine in the mix. That means, aside from eating what my heart desires during outings, my meals at home must be healthy and packed with nutrients. That way, I’m not hating myself when January rolls around and you find yourself struggling to button up your favorite skinny jeans. I like to cook dishes at home with lean proteins, healthy grains, and lots of flavor to help me feel satiated. 

One dish I particularly like making is my Coconut Curry Turkey Stir fry with Quinoa. This is a quick easy curry inspired dish that doesn’t require any simmering in a pot or prolonged cooking. It has the flavor of a curry dish but can be made in a pinch. It’s packed with flavor but it is leaner than the typical curries since it doesn’t have any cream or coconut milk in it. Instead I used shredded coconut so that you don’t miss the lovely coconut you taste in rich delicious curries.

I also garnished it with some tart dried cranberries to give it more flavor. This lean curry dish is healthier than most curry dishes and the quinoa used as substitution for the rice makes it extra good for you!!

Coconut Curry Turkey Stir fry with Quinoa

Ingredients: Serves 2

3/4 lb ground turkey breast

2 cups shredded kale

1 tablespoon curry powder

1 teaspoon cumin powder

1 teaspoon fresh minced ginger

1 teaspoon turmeric

1 teaspoon minced garlic

2 tablespoon shredded unsweetened coconut

juice of half a lemon

salt and pepper to taste

1 tablespoon dried cranberries

2 cups steamed quinoa

1 teaspoon olive oil

2 tablespoon water

optional: add 1 tablespoon peanut butter, and 1 teaspoon coconut oil

Method:

1. Cook your quinoa using the instructions on the box or bag

2. heat a nonstick pan with olive oil

3. Add the curry, cumin, ginger, turmeric, and garlic and sautee

4. Once it’s fragrant, add your turkey and 2 tablespoon water and sautee

5. Cook until the turkey is fully cooked, then add your kale. Let the kale wilt and then season with your salt and pepper and lemon juice

6. Taste and season with more salt and pepper if you want more flavor.

7. I like to whisk 1 tablespoon of peanut butter with a drizzle of coconut oil and a touch of water in a bowl and pour that into my stir fry

8. I also like to add siracha to it, to make it spicy but that’s optional as well.

9. Once the dish tastes to your liking, plate the stir fry over your quinoa and top with coconut shreds and the dried cranberries.
