Mini Tofu Veggie Cakes

This recipe of mine is inspired by my love for falafels and zucchini cakes.  Here I made my own version using tofu and Juicero's Sweet Greens Juice Pulp. The texture of the pulp would hold up perfectly in some savory panfried cakes just like the lovely texture you get from a zucchini cake. Then I decided to mix it with Hodo medium firm tofu for added protein, much like you would add pureed garbanzo into a falafel mix. The results were marvelous. It's packed with fiber, protein and flavor: the perfect healthy bikini body snack :)

Mini Tofu Veggie Cakes

Serving Size: Makes 5-6 mini cakes      Prep Time: 5 minutes     Cook Time: 5 Minutes

Ingredients:

1 whole piece of medium soft Hodo tofu, smashed

1 pack of Juicero's sweet greens pulp

1 tsp minced ginger

1 tablespoon almond flour

1 teaspoon soy sauce

salt and pepepr to taste

Method:

1. Place everything in a blender or mix with your hands thoroughly by smashing the tofu into a smooth crumbled consistency. Form into small balls by rolling them in your hand and set aside.

2. Heat a non stick pan with some high heat cooking oil like avocado oil (1 tsp). 

3. Panfry the cakes until golden brown on each side. Plate and serve!

This is the Thai Sweet Chili Sauce I used for my Mini Tofu Veggie Cakes but you can use other sauces. You can find this sauce in any local Asian Market.

Here is proof that eating healthy can be extremely tasty. Thanks to Hodo Soy for providing me with some tofu to experiment with. I'm finding so many creative ways to use it! It's so versatile just like the pulp I'm using here. Talk about a doubly whammy here. You get fresh pressed juice to drink and you got all your veggies and fruits cut/minced for you so you don't have to do any work. You just got to add, stir, cook and voila another new dish!
