Soft Custard Scramble with Smoked Salmon

This morning I whipped up this lovely super soft scramble with chives and topped it with some smoked salmon and paired it with some freshly cut tomatoes. It really doesn’t take a lot of time to make. You simply need to give your eggs a little love. How to make super soft custard like eggs?

1. Whisk 2 eggs with a touch of water and a touch of cream or milk
2. Season with salt
3. Pour into a heated pan with butter or olive oil and turn the heat to low and let it cook slow and steady.
4. Stir repeatedly to coat the pan with the eggs until they start to slowly curdle into little bits of goodness.
5. Plate after most of the liquid eggs become soft curdles and plate!

I threw some chives in mine to complement my smoked salmon and added some tomatoes for freshness, acidity and well…a little side of veggies is always good for you right?!
